Vodka & Lemon Gel Sauce

Ingredients
300 g Vodka
300 g Water
160 g Caster sugar
3 g SOSA Clear Xanthan Gum
0,5 Vanilla bean
2 g Lemon zest
2 g Lime zest
Mix all the ingredients together while cold, and mix using an immersion blender.

When you mix your sauce, it might turn opaque.
To reverse this, put it in a sous-vide cooker for a few moments.
Once it no longer has any micro-bubbles, the sauce will go back to its original color.
