Ingredients
500 g Strawberry purée
75 g Caster sugar
75 g Water
6 g SOSA Guar Gum
Bring the water and the caster sugar to the boil to make a syrup.
Mix the cool syrup with the fruit purée.
Add the guar gum and mix using an immersion blender until the texture is smooth and creamy.
Store in the refrigerator.
