Egg white- and xanthan gum-based powder. For optimal usage, mix 23g of preparation with 1 L of liquid and store in a vacuum pack to stop air bubbles forming. Use a bubblemaker to form the mix into bubbles, leave these to set for a few minutes and collect them using a skimmer. This texturizing agent is ideal for giving your dishes and plated desserts an amazing finish and a subtle, elegant flavor. The recommended dose is 23g/L.
